Pequod's pizza was founded in 1971 in Morton Grove, Illinois, by Burt Katz — a visionary cook with an obsession for perfectly caramelized deep dish crust. His pequods recipe was unlike anything Chicago had tasted: a thick, buttery crust with a caramelized cheese edge that became the defining signature of the restaurant.

In 1986, the restaurant moved to its beloved Lincoln Park location at 2207 N Clybourn Ave, Chicago, where it has been a neighborhood cornerstone for over three decades.
